About Us

Early Days - Winchcombe

In 2006, Bristol restaurateur and comfort food champion Peter Austen and his hotelier school chum Darren Hiscox teamed up to create the perfect environment in which customers could ‘Eat, Drink and Flop’. Peter had recently returned from a year-long wine buying trip around the world and was immediately attracted by the opportunity to create a new bar, wine shop and restaurant concept called ‘Wine & Sausage’ within the sixteenth century White Hart Inn in Winchcombe, an historic Saxon town near Cheltenham. Almost overnight the plaudits came in and the Inn attained entries in the Michelin Guide, Good Pub Guide, AA Pubs and Inns and the Alastair Sawday’s Guide. Locally, the Gloucestershire Echo described the offer as the “Best British food in Gloucestershire”.

Now open in Taunton

A few years later and the success of Wine & Sausage in Gloucestershire meant that, in October 2009, the time was right for an expansion into Somerset. Located at the Corner House Hotel in Taunton, Wine & Sausage is set beneath forty-four competitively priced budget boutique bedrooms, enabling guests to ‘Eat, Drink and Flop’ in style.

Our ethos is all about classic British regional cooking, made with fresh food from excellent regional suppliers, washed down with a regional beer, cider or a wine chosen from one of our specialist suppliers. You’ll be welcome to stay the night…but just make sure to book a room in case!
